I love super bowl sunday. Just another excuse to get together with dear friends and eat, eat, eat. We are headed to my girlfriends house for a small party. Most people have burger, hot dogs and ribs but in San Diego we eat Mexican! We are having a taco bar with all the fixings. I'm bringing my super yummy shredded beef and spicy shrimp. With a 7 layer dip on the side.
I learned how to make a great 7 lay dip from my mom.
Here are my 7 rules for the best dip
1. Make your own homemade,chunky guacamole with a little extra lime juice, the acid adds a nice balance to the richness of the dip.
2. Use only the full fat sour cream with a whole package of taco seasoning.
3. When you layer the dip you need to see a little of each layer... you eat with your eyes first.
4. Use the best heirloom tomatoes, you can't beat the taste of a great tomato. And remember that not everyone likes tomatoes as much as you do, so don't go over board
5. Only use sharp Cheddar cheese. Grade it yourself it tastes better and use the smallest side of the grader
6. Use good ol Frito bean dip. You can't mess with perfection. But don't use to much ... nothing worse than all beans and none of the other goodies on your chip.
7. most important. DON'T SKIMP ON THE CHEESE. that's the best part.
