Country Fried Potatoes with caramelized onions


Another amazing recipe from Caitlin. I can't wait to make these when we get home!!
8 red potatoes
1 yellow onion
 about 6 teaspoon of butter and 2 teaspoons olive oil use as much as you would like
1 teaspoon of dried thyme.
Salt and Pepper to taste
Put butter and oil in a pan melt and add the thinly sliced onion.  Cook until caramelized about 15 or twenty minutes.  It is a good idea to salt and pepper at this point.  ( I have learned to salt and pepper as I go that way I can taste it to get the flavoring right) At the end of the cooking time add 1/2 a teaspoon of dried thyme cook for another minute.  Take the onions out of the pan and set aside.  While the onions cook put your washed potatoes in the microwave for 2 1/2 minutes and let cool.  When they are cool cut them into bite size pieces.  Add them into the pan and cook them until browned and tender.  Salt and pepper as they cook.  I taste the onion with the potato so I don't over salt.  When the potatoes are brown and tender add the rest of the thyme. Then mix in the onions to heat through.  Serve, if you want you can melt Cheddar cheese on top. (a favorite of my moms.)

I served my potatoes with barbecue chicken.
