Papa Johnson's Ribs... a lovely recipe

This is Papa Johnson's most famous, everyone asks me for the recipe, fall off the bone, eat with a fork, super delicious, gives you faith in the church ( whichever church you like), perfect for memorial day.

2 racks of ribs, washed & cleaned and at room temp.

About 3 cups room temp water

2 containers of BBQ sauce. I prefer Woodys, but please use whichever you like

Salt and pepper

Olive Oil

Heavy Duty Aluminum foil

Preheat oven to 250 degrees, Papa Johnson cuts the ribs into 3 bone sections. I leave them whole: both ways work out perfectly.Lightly Oil and Salt and Pepper both sides. BBQ both sides until slightly charred. Transfer to the bottom of a broiler pan and add water. Water should come be about 1 inch high in pan. Seal with Foil. The seal needs to be super tight! Bake at 250 for 4 hours. I check at 3 hours depending size of ribs. Remove Ribs from pan,reserve one cup of cooking liquid, toss the rest of the water. Mix the reserved water and your favorite BBQ sauce (This takes some time, I use a whisk ) Add the ribs back to the pan and coat with sauce. Reseal you foil and continue to bake for 1 hour.

** Please note that your cooking time is subject to the size and quantity of ribs. You might need to check during the cooking process. If they start to fall off the bone to early getting the sauce in can be difficult. Don't check to often you don't want to loose the steam from the pan.

Serve with baked beans, potato salad and corn on the cob. Yummy in your tummy.
